Campfire Casserole

Perfect for Guy Fawkes Night, this is a hearty 'Bangers 'n' Beans' campfire supper - the kids will love it. Make it in one pan and, if you can, set up a stove to keep it warm outside and serve accompanied with a slice of crusty bread. Serves 4.
1 tablespoon sunflower oil, 450g pork sausages cut into thick slices, 1 large onion finely chopped, 450g potatoes, peeled and cut in 2.5cm chunks, 3 large carrots chopped into chunks, 300ml hot chicken stock, 230g can chopped tomatoes, 1 tablespoon Worcestershire sauce, 415g can baked beans
- Heat the oil in a large pan, add the sausages and cook until browned.
- Add the onion, potatoes and carrots to the pan and cook for a further 5 mins.
- Stir in the hot stock, tomatoes and Worcestershire saue. Bring to the boil then reduce heat, cover and simmer for 10-15 mins or until the vegetables are just tender. Stir in the baked beans and heat through. Season to taste.
- For a curried casserole add 1 teaspoon curry power with the vegetables at step 2.
